way too small. Waah! After sharing with our son who loves Briami, DH and I only have enough for 2 snacks. 2 tastes are not enough! Need more zucchini!
The kabobs were a treat. So, if you're cutting/cleaning veggies for another recipe(like Briami smileys/wink.gif, prepare extra and toss into this marinade for an hour or so. I also used part of the marinade over chicken chunks in a separate bowl and cooked them with onion between each chunk to cook longer than the veggie ones. After everything was cooked, I spooned the left over veggie (not chicken) marinade on all of the cooked kabobs. Looking forward to yesterdays leftovers at lunch today.
Several recipes combined with fridge leftovers
Zucchini 1/2" slices (on ends of skewers because they take longer to cook), eggplant 1/2" thick triangles (from spears), grape tomatoes, mushrooms, onion wedges, red pepper squares
1/4 cup soy sauce
1/8 cup Worcestershire sauce
1 lime juiced
1 tsp dry mustard
1/2 tsp salt
1 Tbs fresh parsley (1 teaspoon dried)
1 Tbs fresh mint (1 teaspoon dried)
1 tsp dried oregano
1/2 tsp ground pepper
2 shakes Penzy's Red and Black (for the cayenne)
2 cloves roasted garlic
1 Tbs maple syrup
1 Tbs honey
1/4 cup finely chopped tomatoes (I used canned, diced)
1 Tbs sliced green onions
Grill chicken 10-15 minutes and veggies 7-10 depending on size of pieces and temp of grill
