Citrus peels can be used to make an old-fashioned cordial known as an oleo-saccharum, a syrup that can be added to the drink of your choice. You’ll need:
Citrus peels (any kind, about 3 cups)
1 cup sugar
1 tablespoon lemon juice
Vodka (optional)
Water
A bowl
A muddler or spoon
Bag peels in refrigerator until you have enough (3 cups). Add sugar, toss and let sit a few hours or overnight.
Muddle to exude the essential oils.
Add lemon juice and a bit of water or vodka to make a thin/thickish syrup. Squeeze the peels to remove all their juices.
Fizzy highball: Ice, gin or vodka, syrup, tonic in whatever proportion you like.
