I found this in Edna Lewis' book "In Pursuit of Flavor". It is an excellent book.
If you're not happy with the aluminum compounds in most store-bought baking powders, you can seek out the ones on the market that are made like this recipe, or you can do what I do and just make it yourself.
I use an old clabber girl baking powder can and mix by shaking:
1 tablespoon of baking soda
2 tablespoons cream of tartar
1 1/2 tablespoons corn starch
Measure accurately.
Works for me!
