so I froze a big bag full when they were fresh at the farmers market. I blanched them, dried them off, froze on a big tray in layers and then transferred to zip locks. Any way, how to cook them now please? Something simple? Can I saute them with onions and garlic and herbs? If so, do I defrost and dry them off so they won't just steam?

 
My MIL took green beans and sauteed them in a little oil or

butter, with a sprinkle of sugar (very little), S&P, and then added just a bit of water to finish them off. Your addition of some sautéed shallots would add greatly. These were really quite good.

 
I used to use slivered almonds and a good deal of butter, cooking the almonds until they're

toasty brown and them spooning them out, adding the beans to the now slightly browned butter and a dash of water to saute until crisp-tender, then added a squeeze of lemon juice and the almonds again. So delicious. You can do it without the nuts and add some zest from the lemon to the browned butter, then the beans.

I also like making a lemon tarragon salad dressing and tossing the cooked beans in that.

 
WOW! Thanks all! I think I might go with Heather's suggestion of a lemon

tarragon dressing. I have a bunch of tarragon in the garden and it won't be good for much longer so this is a great time to use it!

I happen to like my green beans on the more done side, so I always steam them a bit first before

sautéing. Is this person an older person? they might be of an age that also prefers softer green beans, so some steaming from the frozen would by good

 
Is anyone else bugged by the *squeaky* noise fresh green beans make in your mouth? Or did I just

prove YET AGAIN how weird I am?

 
They DO squeak - I do like them crispy in the Ellis Island recipe, otherwise I like well-done.

They are one of two veggies I like out of the can because of the texture.
