Making a light luncheon for some friends of my sisters tomorrow - menu as follows and question

Zucchini -watercress soup - Silver Palate

Chicken salad - curried in crossaints - from here

Lake Pear cake - Judy, Mass.

Question is what to serve with the salad? Just something lite and I haven't hit on it yet. Help appreciated.

 
elaine, I've enjoyed this: watermelon, grape tomato, mint, feta salad.

It would add a dash of color & lightness to the plate, but depends on whether watermelon is available.

This link shows a pureed mint dressing and no tomatoes. I've also had it with sliced red onion, but I'm not that big a fan of that sharpness.

I make a fresh mint/sugar or honey/lime/light oil dressing strictly by taste.

Frico is always a favorite of mine, plus they look pretty. Can't get much easier

I make them about 3" across, but you can do any size. Make them ahead and put in a ziploc - they keep well.

Frico Crisps
Recipe courtesy Emeril Lagasse, 2001

Serves: 20 frico

Ingredients
1 teaspoon butter
1 pound Asiago or Parmesan, freshly grated

Directions
In a medium non-stick skillet melt the butter to just coat the bottom of the pan. Sprinkle a fine layer of grated cheese in a circular pattern over the bottom of the pan and shake the pan to evenly distribute, as though making an omelet (I just do little 3" circles - they don't spread). Cook over medium heat until it has melted and formed a light crust, about 3 to 4 minutes. Continue to cook the cheese until the edges set and a golden crust develops, about 1/2 a minute. Carefully lift and turn the layer of cheese with a spatula and cook until lightly golden on the 2nd side, about 1/2 a minute. Remove the Frico from the pan and either set it flat on a paper towel, shape it over an inverted custard cup, or drape it over a rolling pin or dowel. Allow to cool slightly before serving. Continue with remaining cheese.

Thanks everyone - the watermelon salad looks divine but sadly both watermelon and grape season is

over. I am like Erin and have decided on just a green salad
especially since my nephew has announced he is coming with an appetite tomorrow night.

 
How about something with a little crunch like perhaps a waldorf salad with apples, walnuts, celery..

though you may not want two things with mayonnaise, if your curried chicken salad already has mayo. Was thinking something with a little texture. Or maybe your curried chicken salad has some crunchy ingredients in it??

 
Yes, a small green salad sounds good. Maybe with some candied nuts and cranberries?

That is if you don't already have nuts in the curried chicken salad. Would love to see your chicken salad recipe.

edited to add: Dried cranberries is what I meant....can you get those there?
