making ketchup / catsup

I saved the recipe HeatherSF posted (link & pic) a while back but I don't have any rose hips but made a batch of ketchup today using a less interesting mix perhaps. I'm just curious what other variables you all might use for variations?

My recipe is simple:

2 (6 ounce) cans tomato paste

2 1/2 cups water

1/2 cup white vinegar

1 tspn (Grandmas) unsulphured molasses

4 tablespoons brown sugar

1 tspn salt

1/8 tspn cayenne powder

1/8 tspn leek powder (my own)

1/4 tspn green onion powder (my own)

1 tablespoon garlic powder

1 tablespoon onion powder

1/4 tspn allspice

I just throw it all together and simmer reduce to traditional catsup consistency. (stirring with whisk periodically) Since I have a house full of kids I want it to be pretty close to the name brands in both flavor and consistency but I wouldn't mind experimenting for my own enjoyment. This one is maybe a little sweeter than some but you can reduce the brown sugar and/or not include the molasses at all. I wanted "a little" kick so added the cayenne but this didn't add much for me at least in terms of "kick." I'm not a big fan of the mulling spice type flavors (cinnamon/clove) but might add a tiny bit here as long as it was way in the background of flavor...

I haven't had homemade ketchup since I was a kid when we had a garden

From what I remember Mom's was actually closer to Heinz chili sauce, but quite good.

 
Gee, this might be the ticket to get me to "like" ketchup. Growing up in Pittsburgh, the Heinz...

pickle and ketchup factory filled the skyline, along with smoky, soot-spewing steel mills. Could explain why I don't like pickles either.

 
How fun! I recall Traca and Steve made something similar; I think theirs was called Tomato Jam.

I printed out the recipes and had them in my To Try file... Decided on Bacon Jam instead! : )

 
I'm a limited ketchup eater myself. I usually prefer just mustard but the kids arte the opposite.

But looking for healthy alternatives and trying to avoid anything store bought with "natural flavors" (which can literally mean just about anything)

 
My mom made it, too. If I remember correctly, it takes a LOT of tomatoes to make a little catsup.

 
and I have hundreds of rose hips in the garden right now---how did I miss this recipe? I may have

to try it if they aren't too freeze-dried now.
