Making sausage next weekend. Anyone got a killer recipe to share?

I have several that I'll have to find but that is our program at our ACF meeting tomorrow night

I'll let you know how it goes and bring you back any recipes. The Chef doing it is very good so I can't wait.

 
What is ACF? Thanks for helping. It's interesting, I've been making

sausage for a while, but realize that's more rare than I thought. One chef and culinary instructor I asked for a recipe...confessed he's never really gone beyond breakfast sausage patties.

I started making sausage because many commercial brands upset my stomach. I've never narrowed down the ingredient that triggers it, but if I eat sausage away from home, I've got a 50/50 chance of getting sick.

 
Not sure? Some dommercial sausage and pepperoni trigger the upset stomach, nothing else.

I'm sure nitrates are in other things I've eaten, but for some reason about 50% of the time I get the upset stomach with sausage and pepperoni. I purposely avoid it now.
