Making Spanish Rice for dinner ...and where is my brain?

It's an old family recipe, I know it by heart. Or thought I did. After I had it all put together to simmer I put the lid on and left it to be. Went in to check on it and it looked dry. Very dry. Then I realized. I had doubled the rice. Instead of one cup of rice I had added 2 cups. I *think* I saved it...we'll see.

 
Don'tcha just HATE it when that happens. It's like your body has been taken over by somebody else.

I believe it's the result of over-multi-tasking which, in my case, is any number of tasks above one. And so it goes.

 
Bummer, I love spanish rice. Made it last night w corn, sofrito and racaito.

I hope your rice came out OK.....

 
I went through a stretch in late February where I was certain I had forgotten how to cook.

I made mistake after mistake, and tried to cut corners and avoid the proper steps to get recipes to come out right. Even ones I'd made a thousand times. It was very frustrating.

For me, it came down to stress. I had too much going on and I didn't focus on what I was doing. I cook to feed my family, but it is also a stress reliever for me. So when I get too stressed out, I have to make sure I leave it all out of the kitchen and focus on what I'm doing.

I threw away a ton of mis-prepared and inedible food during that stretch!

I managed to save it. The rice was a bit mushy, but it was ok.

And its nice to know I'm not alone smileys/smile.gif

 
I buy it vs. make it. I buy the goya brand.Sofrito is red (tomato based) Recaito is green (Cilantro

based. Black bean soup sounds wonderful!!! Do you have a special recipe?
