A fellow blogger in Seattle told me about this recipe, it was created by a great chef Becky Selengut.

I'm doing it in the crock pot so if my modifications work out I will post that recipe.

Funny thing, the meat (Costco) is called Beef Chuck Boneless Short Ribs - Choice. I have never heard of such a cut, they are heavily marbled and the meet looks great, like large NY strips steaks, so that's why I'm making this for tomorrow, I think I want to chill off the sauce to remove the fat.

This looks good. I tried marinating meat in coffee and honey a few weeks ago

but I didn't like the recipe I had. This one looks better. I'd love to hear how it comes out.

The ribs are tender and I'm cooling them in the sauce.

After it chills overnight to remove the fat, I'm going to reduce the sauce and add the chocolate. The meat tastes so good, almost smoky from the coffee and the chiles I used.
