Mangos!! A co-worker's tree is laden with them so she brought me a shopping bag full.

I have eaten mangos from the grocery store and thought: meh. Ok not great. But a dozen or so of tree ripened mangos sitting on my counter...WOW!! The perfume is the defination of the tropics. I never new that mangos also has the scent of coconuts.

I made Grilled Shrimp and Mango Ceviche last night that was exteremely good. I have Mango Ginger Lime Sorbet churnning away right now.

The sorbet is actually churnning for the second time because I forgot to add the tequila the first time.

And I still have six mangos left!

 
Rec: Grilled Shrimp Mango Ceviche

Adapted from Chopping Block

Mango Ceviche
1 pounds medium shrimp, peeled and deveined
olive oil
cajun spice blend (I use Penzey's)
1 limes, juiced
1 lemons, juiced
1 oranges, juiced
1/3 cup red onion, minced
1/3 cup cilantro, stemmed and roughly chopped
1/2 serrano or jalapeño chili, minced
1 mangos, medium dice
salt and pepper, to taste
tortilla chips

Toss the shrimp with olive oil and sprinkle with cajun spice. Place on preheated grill pan for 1 1/2 minutes a side.

Cool the shrimp, cut into 1-inch pieces, and transfer to a bowl. Add the lime, lemon, and orange juice, stir to combine, and refrigerate for at least 2 hours and up to 4.

Stir the red onion, cilantro, chili and mango into the shrimp mixture and let sit at room temperature for about 20 minutes.

Taste for seasoning and serve with tortilla chips

REC: Mango Ginger Lime Sorbet

I just added the ginger to this recipe.

Lime Mango Sorbet Recipe

1 cup sugar
1 cup water
Zest from one lime
1 Tbsp grated fresh ginger
3 ripe mangos (about 2 1/2 pounds)
1/2 cup lime juice
Pinch salt
3 Tbsp tequila
Method
1 Heat the sugar, water, and lime zest in a medium saucepan until the sugar has completely dissolved. Set aside to cool.

2 Cut the flesh from the mangoes (see How to Cut a Mango).

3 Put the mango pieces, sugar water, lime juice, and salt into a blender. Blend until completely smooth. Pour into a medium bowl, cover with plastic wrap, and refrigerate until completely chilled.

4 When ready to put the chilled lime mango purée into your ice cream maker, mix in the tequila. Process the mixture in your ice cream maker (Amazon sells a good one) according to the ice cream maker directions. Transfer mixture to a plastic storage container and freezer in your freezer until firm, at least 6 hours.

Makes almost 1 quart.

My absolute fav is to simply eat them out of hand! We also make...

...mango ice cream for me and the boys. The trick is to make sure you get a nice puree and get all the fiberous material out. Otherwise you have mango ice cream with cat fur.

A good, ripe mango is one of life's true pleasures, I think. So good, and so unlike anything else.

My lovely wife has a slight allergy to them, so she avoids them.

there is also a spice mix that you can spinkle them with, taqu....something>>

combo of chile, salt and other yummies. it is fantastic on melon's and pineapple etc. baby is crying so no time to look in the spice drawer, adore the mango, not local eating here in wisconsin, but, local eating here is also sometimes very limiting. i do love costa rica however, and they have very good mangoes, i will just adopt them as a second home.

 
Hopefully she will have a bag or two more for you. ;o) The mango trees here

in Fl are pretty prolific and they are usually pretty large. We love them. I always try and freeze as many as I can to use in smoothies.

 
She has a lot this year. The squirrels take one bite out of each mango.

She can hear the mangos drop when she is in her computer room.

 
Our markets are flooded with Mexico-grown mangoes. I couldn't be ...

...happier.

I don't mind Mexican produce that grows up off the ground.

Frozen strawberry mango margaritas!

Freeze the fruit and blend with lime juice, triple sec and tequila. Add sugar if necessary. Colleen

 
That is so annoying! The monkeys used to do that to our avocados.

Luckily that tree was so prolific that there was enough for all.
