Wonderful recipe for Maple-Glazed Squash and Beans with Walnuts

A Canadian Living Recipe, October 2003

Half butternut squash or 1 acorn squash (about 1 lb/500 g)

2 cups haricots verts or green beans (about 8 oz/500 mL)

1 tbsp. each vegetable oil and butter (15 mL)

2 tbsp. maple syrup (30 mL)

2 tsp. soy sauce (10 mL)

1/4 tsp each salt and pepper (1 mL)

2/3 cup toasted walnuts (150 mL)

* Peel and cut squash into 3 x 1/2 x 1/2 inch (8 x 1 x 1 c) strips to make about 5 cups (1.25 L); set aside.

*In large saucepan of boiling, salted water, blanch haricots verts until tender crisp, 2 - 3 mins. (3 - 6 mins for green beans). Drain and chill under cold

water, drain well. (Make ahead: Wrap vegetables separately in towels, enclose in plastic bag and refrigerate for up to 1 day.)

*In large skillet, heat oil and butter over medium-high heat until foaming. Add squash; cover and cook, turning twice, until tender-crisp, about 5 minutes.

* Add haricots verts, maple syrup, soy sauce, salt and pepper; cook, turning gently , until heated through and evenly coated. Mix in walnuts. Scrape into warmed serving dish. Makes 8 servngs.

Per serving about 137 calories.

The fall and early winter are the best seasons to be in AZ. The trees haven't...

...lost their leaves, the sun is warm during the day and cool at night. PERFECT patio weather!

And soooo much more enjoyable after surviving another hot summer!

Michael, stop tormenting me!

I've visited Phoenix 4 times in the fall (Oct and Nov) and once in the spring (March). The fall weather is especially enchanting. The light is incredible!

But you can keep the summer. LOL

 
Lol, Angie...I think most of us here in the lower 48 will be glad when summer is over, soooo hot

this year. I can't wait for October 15, the magic date, it always seems here in SW Florida, but I'm wishing you a few extra days of lovely summer.

 
LOL! I know, the summers are more than an annoyance. Thanksgiving week is...

...a great time to visit Phoenix.

The rest of the fall/winter/spring isn't bad either, especially considering what your part of the country is undergoing during those months.

I hate the heat, anything over 70 degrees f is too hot for me and over 80f is unbearable. I have the opposite reaction from yours, when I see "back to school".

 
Honestly, when we see "back to school" adds, panic takes over. We have the most pleasant weather

right now. 60s to mid 70s. Lots of daylight and all the flowers are exploding. the thought of fall right now(although fall was always my favorite season) with freezing temps creeping up and snow in the air is just unbearable. I really do feel sorry for you all in this beastly heat, but don't wish away my bit of summer just yet. Thanks!!

 
I hear you Ang - we lived in Anchorage for 2 years (pre-children) and I remember

feeling amazed when I saw snow in the hills in August. Fall is fleeting in Alaska - it's a mere blink between summer and winter. I won't wish away your nice weather yet! smileys/smile.gif

 
And besides, the Silver salmon are just arriving---great fishing and eating with those.

We'll be in Seattle this weekend Carianna. DH has medical tests at U of W med center and we'll be staying in Lynnwood. I always enjoy visiting the emerald city. I always bring back biscotti from a little deli down the stairs near Pike market, and hound the local coffee roasters(although Alaska has some awesome local roasts as well) and wander aimlessly down the aisles of Trader Joes and mentally make room in my suitcases for chocolate, and nuts and more chocolate and, well that's all I'll admit to. This time I might get one of those crepes they make streetside near the art museum.
