I figured, how could you go wrong with 'breakfast' and 'cookie' in the same sentence?!
Anyway, the only change I made was to replace the vanilla with maple syrup. Vanilla just seemed wrong here somehow. I liked them and hubby didn't. I made them for my womens breakfast at church this morning and hubby actually thought I should throw them away! But.... having learned over the years and tastes vary wildly, I took them. Got 4 requests for the recipe - everyone LOVED them. Two ladies have children that are picky eaters and were excited to have something different to give them for breakfast, or throw in their lunchbox. So THANKS!!!
Here is the recipe again, putting the ingredients in order and expounding just a bit.
The Best Breakfast Cookie Ever

No matter when I serve them, I am always asked for the recipe. They fly off the plate!
Ingredients:
2/3 cup butter, softened
2/3 cup sugar
1 egg
1 tsp. vanilla (I used maple syrup)
3/4 cup flour
1/2 tsp. soda
1/2 tsp. salt
1 1/2 cups oats
1/2 cup wheat germ
1 cup shredded cheddar cheese
6 bacon strips, cooked crisp and crumbled
Preparation:
Cream butter and sugar. Add egg and vanilla (or maple syrup) and mix well.
Combine flour, soda and salt; add to creamed mixture and mix well.
Stir in oats and wheat germ, then cheese and bacon – this will be a very stiff mixture.
Drop by rounded teaspoonsful onto greased baking sheets.
Bake at 350 degrees for 15-17 minutes. Remove from oven and cool on cookie sheet 5 minutes before removing to a rack to cool.
They keep and store well.
