They lived! Everyone loved them...
1) Washed/peeled/quartered the potatoes
2) Cooked in water/stock combo in 2 stock pots.
3) Drained and dried thoroughly
4) Used a food mill on the smallest setting, milled over warm cream with melting unsalted butter and salt. (MIL is allergic to pepper)
5) Folded in the potatoes.
6) Transferred to a covered casserole dish. Reheated with more pads of butter on top.
I finished the potatoes about 15 mins before I had to leave, so they never cooled completely or went in the fridge.
Lesson learned -- I bought a crappy food mill, which I will return. The blades should be bent higher to better capture the food to grind, the low blade design allowed the food to just flip over the top and be pushed to the edges instead of going through the mill and no amount of trying to push it through manually worked, but enough of the potatoes got through to make the dish, but a lot was wasted too.
