I kept waiting for her to say what to do with all those cut-off cake crumbs (CAKE BALLS!!)

 
cheezz, decoraters will add some cut-off crumbs to the icing to make a thicker *crumb*

icing...this version is then capable of filling in holes, drips and gaps in the tiered cake.

I was amazed at how stiff her cake must be...she was flipping that sucker around like a block.

 
Oh...where was she 6 years ago when I made a big open *book* for the library volunteers.

First attempt at decorating a full half-sheet cake
First attempt at transferring edible-paper images (list of volunteer names)
First attempt at scoring the edges to look like sheets
First attempt at carving the cake so it dipped in the open spine area.
First attempt at fondant for a page marker.
First attempt at WRITING 48 volunteer names in melted chocolate AFTER transfer of edible paper failed miserably.

Trust me...this woman is good and makes it look easy. It...isn't.

A lot of places make pound cakes for their layers--particularly wedding cakes. Sturdy. nt

And they are also possibly frozen.

 
How do they get a smooth frosting when crumbs are added? Isn't it lumpy?
