I left out the espresso because I'm doing them as sandwich cookies filled with a peppermint ganache. They rolled out easily and taste great.

Of course the taste great part is because of the terrific Dutch processed cocoa my friend Meryl sent me!

I made up the dough in a marathon session yesterday---still have to roll and bake. I'll chime in

with my results later this week.
