turned out very good. But I made it in a crockpot (4 hours on high) and added a teaspoon of...... instant coffee! Since I only had a little ketchup, I used crushed tomatoes and a couple of minced sun-dried tomatoes, and added mushrooms and onions. Very good!!

 
Glad to hear it. So...you didn't add the vinegar? I always thought that was necessary to tenderize.

Maybe the tomatoes do the tenderizing? Did you make mashed potatoes? That was my favorite part...hot creamy potatoes with the sauce. I wasn't a big meat eater, but loved the dish just for that oniony tomato sauce.

 
I'm a bit surprised as well. Tomatoes do have enough acid to tenderize but it seems some meat is so

tough these days.

 
Yes, I followed the recipe, adding the vinegar. Sorry, I was just listing what I

added that your mother's recipe didn't. I forgot she added onions. And yup, I made the mashed potatoes too, after fighting for 10 minutes with my pressure cooker - loose washer ring.

 
Yes - I tasted it and it just seemed to need "something" and I remembered the

deep, full taste of red-eyed gravy and just gave it a try. I didn't have much ketchup, so I had to ad lib with crushed tomatoes, and it just seemed too "light".

The addition of the coffee granules was great - you couldn't taste it, but it gave the sauce some depth.

 
Brilliant. I'll remember that hint. The ketchup and onions cook down to a thick meaty sauce. Oh,

now you've got me wanting that taste.
