I actually have her Great Cookies book, where it came from, but your post inspired me to finally make it.

I loved the dough - it was easy to work with, and tasted great! I used a little bit of flour to roll it out instead of confectioner's sugar, For some batches, I even just rolled it between parchment. Easy enough. I didn't use superfine sugar, just regular granulated.

The cookies were crisp, and tasty. I cut out a few shapes (tree, "gingerbread" man, stars) and was planning to decorate them with royal icing. I started decorating a few, and was having way too much fun.

That's when I decided to stop decorating, and give the un-iced cookies, along with some sprinkles, a tube of mini M&M's and a squeeze bottle of royal icing to the recipients for a decorate-your-own cookie kit!

It was the biggest hit of the season! Everyone loved it, little kids and adults alike. I think I just started a new gift tradition!

...and I am totally stealing the cookie-decorating kit idea.

Here's what I'm sending out.....We have friends who have huge Ponderosa Pines on their property, which they call High Pines. I found a cookie cutter of two pines trees and made several sugar and gingerbread trees, with green Sugar Baby Icing and red ornaments. Then I cut a slab of gingerbread about 8 inches long and 4 inches wide and cut notches into it. The tree trunks stand upright to make a tiny forest--an edible bonsai. I'm writing a holiday message to them in Royal Icing on the trees. So far the test version looks good. I'll try to remember to take a photo of the finished forest.

 
Yes they do, Jane. I made ahead and froze- put the filling in before making my cookie plates up.

They stayed crisp, too.
