ordering some soon to make Peter Reinhart's Vienna Bread. What did you use it for and how did it turn out?

I'm sitting here making volunteer place settings that say "We Treasure Our Volunteers" with their name printed below and EVERY SINGLE ONE makes me sad to think of barb_B's poor mom.

Not that that has ANYTHING to do with diastatic malt powder...you just need to know how my mind thinks. Anyway, let me go confirm what I have...

shoot...I have a one pound bag and the directions say 1/2 to 1 TEASPOON for 3 cups of flour.

Want some???

 
I've used it in the past on very heavy doughs (100 percent rye, wheat etc.) in much the same way as

you'd use sugar to coax along dried yeast. I usually add a tablespoon or 2 to the dry ingredients and let fly. Frankly, I haven't used it enough to tell if it makes a difference or not but the breads I DID use it on turned out well.

I believe this will be of no help whatsoever but I had a great time writing it.

 
Oh Mar, you are so sweet. I will be calling the director next week, not mentioning my

mom's name. There were a total of 27 volunteers let go. The director is on vacation until next week.

I will talk with her and tell her I "heard about this" (ie can't can't say mom's name) then tell her I can write a blog about it (Which cracks me up, because I do not blog), then tell her I am going to the press....

All of my friends in town are equally outraged.

Thanks for thinking of Mom! I called mom after all the responses, and she was so appreciative of the support. The Kotex comment made her laugh!

Mar, you are so generous with your time and support with others.. I am so glad that you have not had this experience.

 
The few New York water bagel recipes I've printed use malt powder or syrup in the dough

as well as some for boiling the bagels before baking. I bought some malt syrup but haven't had the time to make bagels yet.

That way I can see where I'm at.

I think an ounce will cover a LOT of bread, pancakes or bagels.

 
Marilyn, could I have some--if it is still available?

I have been wanting to try the stuff for ages, but have been too cheap to buy it, or at least a whole package of it!

I went to a demo once where someone made bage.s with the malt powder. . .

and they were very, very tasty. The plain bagels had that certain flavor that was wonderful.
