Massaged Kale Caesar with Low Fat Yogurt Dressing

Using Marilyn's crushed kale method smileys/wink.gif, Dh and I have cut the fat in our Caesar dressing by using yogurt and it's pretty tasty. Colleen

Yogurt Caesar Dressing - makes about 1 cup

2/3 cup 0% Greek yogurt - we have been using Chobani

2-3 Tbs fresh lemon juice

10 anchovies OR 10 anchovy-sized squeezes from tube

2 Tbs light mayonnaise

1 Tbs Dijon mustard

2 tsp Worcestershire

1 small garlic clove, finely chopped (add more, if you like smileys/wink.gif

2 Tbs grated parmesan

Salt and pepper to taste

Blend or process. Chill before serving.

I think massaged kale salad is delicious. What is the "crushed" method? I just

rub the torn kale in my hands--literally massaging it!!
It is delicious with just a light lemon juice vinaigrette. Caesar would be an interesting kind also.

 
*Crush the kale* was the terminology used in a yoga magazine eons ago when I made my first kale

salad. They said to drizzle the oil on and firmly crush with your hands to break down the fibers. They pointed out that the kale should go from a basic green to a rich dark green (citing the chemical name of what was happening. Chloro...? Phyto...? Agh...just nod and pretend you know what I'm talking about). Recipe said to continue crushing for 5 minutes and then add the rest of the dressing ingredients.

Personally, I did that ONCE. Maybe if you're at a yoga retreat and meditating on your third eye while bemoaning the fact that you DIDN'T eat steak the night before you left for the retreat, five minutes might not seem like an eternity. Did to me.

Here's what I do now: Take one head of organic curly leaf kale ($1.99 at Walmart) and trim off bottom of stems, fill kitchen sink or large bowl and soak in ice water until tripled in size. Lift out (don't dump or you'll get all the sand right back), de-stem and break into bit-size pieces. Spread out on towel and let air dry for a while. Put back into big bowl, squeeze half a lemon, drizzle of mild honey, splash of olive oil, kosher salt, grinds of peppers...crunch 1 minute. Put in container. Eat for a week in basically anything. I can even throw this stuff in a smoothie.

Afterward, check teeth carefully.

AND...bonus perk, my iron level, which is habitually low for bi-monthly blood donations at work, is normal every time now.
