MAUNA LOA MUD PIE (serves 6)

Crust:

1-1/2 cup crushed chocolate wafers (about 30)

1/4 cup softened butter

2 oz chopped macadamia nuts

Filling:

1/2 gallon coffee ice cream

Macadamia Nut Fudge Sauce:

2 oz unsweetened chocolate

1/4 cup butter

1/4 cup light cream

1-1/2 cup powdered sugar

1/2 tsp vanilla

1-1/2 oz macadamia nuts, chopped

Combine wafers, butter and nuts. Press into 9” pan and chill.

Spoon ice cream into crust. Freeze until very hard.

Sauce: melt chocolate and butter together. Remove from heat and stir in milk and powdered sugar. Bring to a boil over medium heat and cook 5 minutes, stirring constantly. Remove from heat and stir in vanilla and nuts. Cool. Pour sauce over ice cream and spread. Freeze.
