Maybe a dumb question, but is ALL couscous whole grain? It is included in

the salmon and salad diet (that I am roughly doing these days) and it does not allow most processed carbs, but couscous (cous cous?) is allowed. I never paid any attention to whether it says whole grain on the box or not. Anyone know?

Edited: I guess in the back of my head I knew it was a pasta, but wondered if all cous cous was made from whole grain, which you have happily answered, below! Thanks.

 
I don't think so. I thought some were made from processed flour...and others

were made with whole wheat...just like pasta.

To be honest, I'm not sure if couscous is a whole grain at all? Must go check now....

I've just discovered couscous and love that it's microwave-friendly, cooking in just 5 to 10 minutes.
But can I include it in my daily tally of whole grains?

Believe it or not, those tiny little grains of couscous aren't grains at all.
They're a form of pasta that's usually made from refined wheat flour. However, you can find the whole wheat kind in natural food supermarkets.

Switching to whole wheat couscous means getting 7 g of fiber per serving, compared to just 2 g in regular couscous.

Need another reason to choose whole grains? New research suggests that eating three daily servings of whole grains a day reduces stroke risk by 36 percent (Jour. of the Amer. Med. Assoc., Sept 27, 2000).

Dawn...have you tried quinoa? That's rapidly becoming my favorite. It's like couscous, only

nutty-tasting....like the difference between white rice and brown rice.

And you can make a big pot and heat up as needed. Works as a grain for almost all meals, including breakfast.

It's high protein and fiber and can sub as a full protein (with some sort of bean) for vegetarian diets.

 
Thank you! Last night we had a variety of salads from Wegmans fresh food bar, and

I think one of the ingredients of one was quinoa... either that, or wheatberry. Now I have to go look it up and find a picture of it so I can find out what it was so I can buy/make more. It was nutty and good.

Yes, it was quinoa (I had no idea it was pronounced "keen-wa"!). I thought

they were either that, or little garbanzo beans. Yes, they are very good, and I will be trying yours and other recipes using them when they let me get back to the stove ;o)
