they are advertising "3065 chicken recipes" and "874 chili recipes" and "180 pizza recipes". Who has the time to go through all of them? Their rating system is bogus, the new editor is inane. I hate what has happened to that site. Honestly, this is the only site where you can get recipes and advice (for free) and 90% of the time, they are great.

I followed a Cook's Illustrated recipe for apple strudel. Huge article about how the chef painstakingly tried everything under the sun to get the "perfect strudel". The filo crust was great, the filling was uncooked. It was a flop.

Oh, geez, I'm ranting. I think I'm still depressed because my caramel literally fell off my apples.

 
Were your apples waxed, clofthwld? Caramel can't stick to wax

Generally, like other fruits and veggies, apples are waxed before hitting the market- or sprayed with some awful something-inhibiting stuff. I haven't made caramel apples for a while but I know I had to scrub the bejeebers out of them before coating them or the same thing happened that you experienced- the caramel fell off. I used to be able to get apples directly from the tree so I wasn't forced to scrub too.

If that isn't the problem, then I would say there is something wrong with the recipe. Try the one I posted and see if that works better for you.

Personally, I don't even bother going over to Epi any longer.

It's simply melted Kraft caramels with a smidge of water. The package states how much. We always kept ours in the refrige and took them out about 30 minutes before eating. Caramel never fell off. Not to mention that Kraft caramels are the only kind to buy, in my book.

 
They even make squares of caramel to place over the apple and then zap in the micro. too easy?
