the one for the laquered bacon and then a link to the black pepper almonds. Joe posted the salmon rillettes in T&T. I'll post the rest later - at least by the weekend.

I spent last night going through the leftovers that we hadn't already eaten and trying to figure out what to do with them. Froze the blanched asparagus - figured I could make a good old fashioned casserole with it - you know, one your mom made back inthe '60s with soggy overcooked asparagus, cream of mushroom soup, and boiled eggs (sorry - it's one of my guilty pleasures).

I made leftover pasta salad last night with a bunch of the antipasto platter stuff. Plan on making some fruit salad tonight with the fruits. And then top it off with some brie cheese that was left over and a glass of wine - sounds like a pretty good plan for supper to me.

Oh - the French green beans are in the crockpot cooking down today - depends on how much they cooked down - I might try those green bean patties posted above. Not sure how it fits into tonight's menu but what the heck. Or maybe I'll just do them my southern way and cook them to death for another 24 hours.

MCM, I love the idea of the asparagus.....

There is another one that a neighbour used to make. Plain boiled, sliced potato layered with asparagus and the sauce was boiled egg, some of the as-gus water and ????? it was a very yummy dish.

I sometimes make mash potato around the casserole and the filling is a thick white sauce with chopped asparagus and boiled eggs, a variation on plain 'Egg and Potato Pie', my most favourite comfort food dish.
