Meryl, can I use regular Hershey's or Scharffenberger cocoa for this?

M, I don't recommend natural cocoa - I've tried it and it just didn't make it in this recipe -

it gave it a harsh taste. Stick with Dutch Processed - it's much better in general for puddings, ice cream/custards, etc. Droste should be easy for you to find - I used to buy it at Publix.
