MERYL!! Do you know if I can make the banana creamed fruit the night before??

Thanks. That's what I was afraid of...I have to be there at 8am tomorrow and was trying to do ahead.

 
I made a really good fruit compote - see down below at #25255

I made the banana creamed fruit (the morning of) to be dolloped onto the hot fruit. I didn't care for the foamy banana cream...some thought it was gravy and didn't know what to do with it smileys/smile.gif

 
Ooh - sorry about the banana cream -It doesn't sound like it would have worked well over hot fruit-

Didn't it melt? I wonder if it would have been better if it was whipped until stiff?
I haven't made it in years, so I'll have to try it again, and see if I still like it.

 
I whipped and whipped but it never really got stiff peaks. It didn't melt on the fruit,

but, then, I was scooping and serving so it never really sat around more than 5 minutes. I think it would be excellent done with whipping cream and a bit of vanilla. It's just the spongy egg whites I didn't like.
