This is a Cook's Illustrated recipe that is just out of this world!!! The crust is still crunchy a couple of days later and the filling is VERY coconutty. I did make 2 changes -- I increased the 1/2 cup coconut to 1 cup sweetened coconut and decreased the 1/2 cup sugar to 1/3 cup.
