I reduced the amount of grated orange rind and would reduce it even more next time.

I added some toasted baby pine nuts and they were terrific with it. Next time I would try chopped peanuts.

I used only fresh orange juice rather than concentrate and naturally, left out the water.

And finally, I doubled the curry.

I liked it so much, I didn't even bother eating the chicken.
