I would cut the orange zest way back next time to a whisper & not a shout-I think it overpowers the fig to the point you can't taste them. I made my dough in the food processor after chopping the walnuts & figs in it. Didn't see the point in getting the mixer dirty too and the processor did a nice job.. I wish she had been more specific as to pan size when she says to make the log the length of the pan-I think she is using a jelly roll pan-also you don't really make a log-you make a long flat rectangle. Make sure your slices are pretty thin. I had to turn down the oven and leave them in for considerably longer to dry, even though I cut them to the width suggested. And make sure your nuts & fruit are FINELY chopped. These are pretty hard to cut neatly without them falling apart and the egg white/sugar coating makes it even harder.Link: http://smittenkitchen.com/2009/01/fig-and-walnut-biscotti/
