Meryl, or anyone else, have an awesome Moroccan, Indian or Spanish Pork Roast recipe?

Hi Marsha, I don't have a T&T, but found these online. The first two had great reviews:

 
Meryl, I did a google search before I posted here, didn't see these. I'm tempted to have a Morrocan

flavored thanksgiving. I have all the veggies, etc. but not the right recipe for pork roast.

You and I enjoy the same tastes and I thought perhaps you had a recipe already. I searched thru my computer cookbook....now I need to start looking through some cookbooks to see if I can find something.

Marsha, it's not going to be easy to find a Moroccan recipe for pork roast, since most Moroccans

are Muslims, and they don't eat pork. They do eat a lot of lamb, mutton, etc. Maybe you can find a Moroccan or general North African spice rub for lamb or chicken and adapt it?

 
Meryl, thank you, I didn't realize; sometimes I feel I shouldn't eat it either! I should be able to

come up with something to make my menu full now. Thank you SOOOOO much for EVERYTHING. You're a dear friend!!!

 
Oh yeah, I forgot about that one. I have to try it one day (minus the cloves, that is - hate

'em - hate 'em. Otherwise, it sounds great!

 
Hi Marsha, Daisy Martinez has a wonderful Pork recipe (from Daisy Cooks). Unfortunately, I do not

have the cookbook. I borrowed the book from the library. If I recall correctly, you make the marinade and inject it into the pork, for close to 3 days. It was really good!

I served it with a churasco/chimichuri sauce on the side.
