Meryl questions regarding your orange butter cake

Meryl: I offered to make the cake for my brother- in-law's 60th birthday. I was wondering can I make your cake in an angel food cake pan? Would I grease the pan? I never have much luck making a layer cake look "fancy".

I would probably prefer to use the orange cream cheese frosting if you thought it would look dressy enough. Thanks. Betty

 
Betty, I use a tube pan, which is the same as an angel cake pan. Grease and flour, as the recipe

indicates. The recipe gives you a choice of using a tube pan, two layer pans, or a bundt pan - I use a two-part tube pan.
Just a note: This is not a very high rising cake, although it certainly isn't flat. If you're looking for a very tall cake, this wouldn't be it, but it's very pretty and delicious. An orange cream cheese frosting is great with it.

Meryl - thank you for responding. I may save this cake for another day then - I would like something that looks very festive and special. Thought I would stay away from chocolate as the last two family cakes I have made have been chocolate. Any suggestions?

 
Betty, since I'm an admitted chocolate addict, most of my T&T cakes that I'd recommend for a

birthday are chocolate. I do have a great recipe for "Strawberry Charlotte Russe" if you have have access to some good strawberries. Also, it calls for soft sponge-like ladyfingers. It's very beautiful and delicious - will post it if you're interested.
Also, there's a Strawberry Cream Cake posted in T&T -I believe it's from Cook's Illustrated. It's supposed to be excellent, but I haven't tried it yet.
If you change your mind, and want some incredible chocolate cakes, both in taste and appearance, let me know, and I'll post some.

strawberies are uncertain this time of year in western Canada. Perhaps I'll make an orange chiffon cake with orange cream icing.
