Meryl, the Mexican Chocolate Icebox cake was a huge hit. Even the fussy pre-teens wanted seconds.

I thought the sophisticated flavor of the cinnamon with the chocolate wouldn't appeal to the girls, but they loved it. And Moyn's Killer tomatoes were also a huge hit. I didn't use the food processor to combine ingredients. That was my only change to the recipe. So very good.

And I finally had success with a rolled shortbread cookie dough. It's from Ina Garten and it's Eli Zabar's shorbread recipe. It actually held shape and didn't spread out like previous attempts. I did set the cookie sheets filled with the cut outs out on the back deck(our extra freezer in the winter, like Brian) to thoroughly chill. that may have been the key to keeping their shape. I also added 1/2 cup of cornmeal for added crunch. I made the Linzer cookies from her cookbook from the dough and filled half with seedless raspberry jam and the other half with Nutella. Yum Yum.

And my black olive penguins were just too cute to eat. It took the guests a long time to get the nerve to pop those cuties into their mouths. But they did.

 
Ang, I'm so glad it was a hit! I guess all that running around looking for ladyfingers was worth it!

I still had two leftover pieces in the freezer, so my husband & I finished them off several nights ago. Freezing doesn't hurt this cake one bit.

I also made a shortbread cookie from Ina Garten, "Jam Thumbprints," rolled in coconut, and filled with fruit-sweetened raspberry and apricot jams. Third time making these - delicious.

 
I think that thumbprint dough is the same shortbread dough. Very versatile.

Sorry to say I have no leftover cake. I'll just have to make another, if I can find the ladyfingers!

 
Well, that's the beauty of making a large cake for just two people - there are always leftovers!
