I doubled the recipe using all of your tweaks except for:

Used rice vinegar

Reserved and after tasting, used full amount of minced ginger and red pepper flakes

Edited at 8:06 pm: I used full amount of toasted sesame oil, not more like you did

The end result was a tangy, nonsweet dipping sauce that was the perfect complement to the pot stickers that also got rave reviews.

One young woman said that my potstickers were better than Roy's!!
