I fixed the teacher's luncheon yesterday, and my heart really wasn't in it. I am tired. And I just wanted to give them a nice lunch without too many brain cells involved.
I made: Artichoke Pasta Bake (from the Budget Bytes blog), an Italian Sausage Lasagna (from me), Mexican Rice with Chicken, a variation of Dorothy's Overnite Slaw, Lemon Pound Cake, Spiced Apple Cake, and Fudge-Topped Brownies. Oh and a romaine salad for either a salad or the base for the slaw.
I double the quantity for the Mexican Rice recipe and placed some raw chicken breasts on top. When the chicken was done, I removed it and chopped it up into bite-size pieces. I never covered the rice, and just kept adding some broth and stirring it to keep it from sticking. Well, the rice got gummy, so I added some more broth to moisten it, which it did. The flavor was good, but the consistency was not that of Mexican rice. Since I was out of time, I renamed the dish Mexican Chicken Risotto. I delivered the lunch and went home and had a cup of coffee, ate a brownie and watched an episode of "Once Upon a Time"; a much needed respite.
Today, I saw the teachers, and the secretary asked for the recipes, especially the risotto.
That's what I get. So, I tried to recreate what I did wrong and sent it to them. I had some leftover rice and made a soup out of it for the kids, and they raved. Go figure. LOL.
