Michael, I made the Butternut Squash and Black Bean Soup

It was very good. I had a whole squash and cut it in half and roasted it that way instead of peeling and cubing. There was plenty of lovely brown roasted surface. Then I scooped out the flesh, dumped into sautéed onions, celery and garlic along with ALL the broth then used my immersion blender. Then I put the beans, corn, chopped peppers and cilantro in and simmered. I don't think these "shortcuts" changed the final product and it made it less "fussy" to make. I had some raw chicken to use up and I cut it up and added it to the simmering soup. We liked the addition a lot.

Does sound good. I can recommend adding kale to this mix. I've used chicken, kale, butternut, onions

in Dawn's Green chili burritos and it's an excellent combo.

...cook like yourself can bring those elements together any number of ways.

My immersion blender gave up the ghost a couple of years ago and I haven't replaced it yet.

Don't need an immersion blender. A good potato masher works great

Funny- I didn't have an immersion blender until just a few years ago when a friend gave one to me insisting it would change my life. I have 2 potato mashers that have always done the job. For some reason when I made the soup I used the immersion blender. But I didn't need to.....

 
Believe it or not, our Ninja blender is a workhorse around here. It cost a whopping...

...$69 at a cyber-Monday deal a few years back. It has 1000 watts of power and the multi-tiered blades make short work of anything we put into it.

I love it for pureeing chiles, spices, etc., to make Arbol Salsa.

It cleans up easily, since the whole blade lifts out and the container is square.

PS: My favorite non-traditional use for my good ol' potato masher is to break up ground meat while it's browning in the skillet or wok. Works like a charm!

 
Since you brought that up....

I tend to use mine when I am karaokeing in the kitchen, much to my dogs (and husband's) amusement

perfect microphone.
