Michael, I'm making your Tortellini soup for my bookclub ladies next weekend. question

I think I need to leave out the greens because of some medical conditions, so I thought I might have a bowl of sliced up baby spinach and basil for the ladies to add to their soup bowls and then pour the soup on top. those greens should wilt nicely and quickly. I don't want to make 2 soups, and don't want to leave out the greens for most of us. do you think this would work? How many would 1 recipe serve----salads and bread will also be on the table. I wouldn't hesitate to double the soup, as it freezes well. My wife puts baby spinach...

...into her soups all the time. I does wilt almost immediately, and if you chop it a little bit it is pretty close to bite-size.
