I mixed by hand with a whisk and baked it in a 10" deep dish buttered pie pan because that's what I could find. Served with crispy bacon, baked beans, mashed Garnet yams and canned "mixed greens" from Glory. Made the butter/honey schmear and added just a hint of cinnamon. I kept the bacon slices whole as the meat portion rather than add it to the butter blend.

Every 30 seconds Mom asked: "We're having cake for dinner?" and I said "No, it's corn meal" several times and then I said "Yes, we are."

And she goes: "Oh. Cake for dinner."

So yes, I'd say it was a success. Thank you.

PS: I goofed and used 1/2 C milk and 1/3 C water rather than the reverse as the boxes specified. I'd make that same mistake again.

 
Marilyn, where did you find the Jiffy cake mix?

I used to make the same thing - delicious! But I can't find the Jiffy Yellow cake mix anywhere. I was told they discontinued it.

 
My local Walmart. Oddly, I found that product after Michael posted, but they had no muffin mix.

Then about 3 weeks later there was an entire end cap of the muffin mix. I didn't look for the cake mix since I already had a box. It took a bit of time to find bacon.

I'll take a peek next time I go. If they have some, would you like me to buy them for you?

 
I was wondering .............

If I used around 1/2 of a regular yellow cake mix. The Jiffy cake mix is a 9 oz. box and the cake mixes now run around 15+ oz. Let me try the half of a regular cake mix and see how that works. If it doesn't work out I'll take you up on that offer if you ever see the Jiffy cake mix. I had read on the internet that it was discontinued, I'm surprised you found some.

When I did this, I made the 1/2 cake mix in a separate bowl from the corn muffin mix, following ingredients for each listed on the boxes, then stirred them together. Did the calculations and wrote on the box with the remaining half cake mix. Was excellent so not sure Jiffy cake mix would have been better. We make cupcakes and use them for fruit-topped shortcakes. They come out of the freezer in a heartbeat! Colleen

Jiffy Spoonbread

My mother used to make this all the time - loved it!!

Corn Spoonbread

1 (8.5 oz.) pkg. corn muffin mix
1 (8 oz.) can cream style corn (drain partially, but leave some liquid)
1 (8 oz.) can whole kernel corn, drained)
1 (8 oz.) container sour cream
½ cup butter, melted
2 large eggs

Stir together all ingredients and pour into a greased 11 x 7 inch baking dish. Bake at 350 for 35 minutes or until golden.

 
Okay, so I used part of the Duncan Hines Yellow cake mix......

It worked!! Wow, I made the calculations and followed Michael's recipe - a winner! The butter, bacon and honey spread is to die for! Thank you for everyone's help - it was greatly appreciated.
