Michael, why oh why did I choose Ina's Macaroon recipe instead of Alton's this year?? what a mess!

I should have believed the comments and tested a few first, but I was in a hurry. there is too much liquid to the coconut ratio and it pools out when baking---kinda looks like Marilyn's semi-melted snowmen. I sat and trimmed the excess away with kitchen scissors---4 dozen trims. gahhhh. and these are for a cookie exchange tomorrow. I'll dip the bottoms in chocolate tonight and all will be well. Yeah, I quit making them altogether a few years ago. Most of mine were dry and...

...mealy. Then I tried Alton's recipe.

What a huge difference! You have to follow the recipe exactly and measure the way HE measures, but it's worth it.

Sorry for your trouble with Ina. Reminds me of a song, although slightly different lyrics: "Someone's in the kitchen with Ina... Someone's in the kitchen, I know-o-o-oh. Someone's in the kitchen with IIIII-na, trimmin' on the old maca-rown".

Silly.
