Michelle: Avocado Salad

I believe I got this Avocado Salad from this site or the epicurious.com site, but I can't seem to find it on either site. So if someone wants to claim ownership, speak up!

Avocado Salad

Arrange in a bowl:

6 cups mixed salad greens

2 oranges, peeled, pith removed, separated into segments (I used 4 oranges)

2 avocados (I used 3 avocados), pitted, peeled, and sliced right before serving

1/2 cup pine nuts, toasted (I call 'em pinon nuts)

Combine and pour over salad:

finely grated zest of one orange

3 tablespoons orange juice

1 tablespoon walnut oil

1-2 teaspoon sugar

salt and pepper

Toss gently; save some of the orange, avocado, and nuts to strew on top after the salad is tossed and drizzle with a bit more dressing.

 
I think I may have been the frst to post it. It's from "Classic Home Cooking" by

Mary Berry and Marlena Speiler--an amazing cookbook. I make it all the time. Glad you enjoyed it!

 
I've made a similar salad for a long time.It is also good with

other fruit added like kiwi and even melon balls. I use a poppyseed dressing, but like the idea of the walnut oil in this recipe.
