Can't see the recipe but here is what I found when I made a similar-looking dessert. I used a butterscotch-type of cream filling between the crepes.

Because of the nature of the crepes they get kind of "rubbery" when there are so many and when they have a wet filling between them. So something that is so gorgeous to look at (never mind the tedious to make part) might end up not being the most fabulous-tasting dessert because of the texture.

Stunning though. Want to impress friends? Yup, that will do it. Use chocolate- then nobody will care about the texture.

 
I find that if you use as little flour as possible to make crepes--just enough to hold them together

the texture is more delicate. Using more flour makes them easier to work with but tougher. I still don't see the actual recipe but you could use any crepe recipe--a high egg-to-flour content is best.

(I have submitted this post to my prototype "Steve2beQuiet" software and it is showing no potential entendres doubles. We'll see.)
