Provençal Bread

Heavy and dark. Better the next day.

1 t. yeast 1½ c. bread flour (Canadian AP flour)

¾ c. whole wheat flour ½ t. anise or fennel seeds

1 t. dried thyme leaves 1 garlic clove minced

¼ c. minced onion ½ t. salt

¼ c. sun-dried tomatoes * ¼ c. mashed potato (use potato water)

⅔ c. water (from potatoes)

* Do not use tomatoes soaked in oil. Use dried tomatoes and soak in water 10 minutes in hot water. Drain and snip into ¼" pieces with scissors.

Process at basic cycle. Wonderful spread with cream cheese.

This one is just phenomenal!! It's from the No Salt, No Fat, No Sugar Bread Book. (All of which you would think would be synomymous for No Good, but there are some dandies in there.)
