Rye and Roasted Onion Loaf
1 tsp yeast 2 tsp. dry thyme leaves
1/2 c. rye flour 3/4 tsp salt
2 c. white flour 2/3 c. roasted onion, chopped
Roast the whole onions (2) in the oven at 400 for about 45 minutes. Or in microwave for about 10 minutes. Peel and chop coarsely. They can be added immediately or at the beep. Bake on Basic cycle.
Provençal Bread
Heavy and dark. Better the next day.
1 t. yeast 1½ c. bread flour (Canadian AP flour)
¾ c. whole wheat flour ½ t. anise or fennel seeds
1 t. dried thyme leaves 1 garlic clove minced
¼ c. minced onion ½ t. salt
¼ c. sun-dried tomatoes * ¼ c. mashed potato (use potato water)
⅔ c. water (from potatoes)
* Do not use tomatoes soaked in oil. Use dried tomatoes and soak in water 10 minutes in hot water. Drain and snip into ¼" pieces with scissors.
Process at basic cycle. Wonderful spread with cream cheese.
