diabetics, came from the wife of our doctor whose neice was diabetic. It doesn't totally eliminate sugar but given that oatmeal is still thought to be specifically beneficial for diabetics, perhaps that was the saw-off.

Diabetic Oatmeal Cookies

½ c. butter

1 c. flour

½ c. brown sugar

1 c. rolled oats

½ t. baking soda in 2 T. boiling water

½ t. salt

Cream sugar & butter. Add water with soda, flour, oatmeal & salt. Drop onto greased cookie sheet. Press down with a fork. 400º. Watch carefully. (No time given)

Oatmeal Cookies

½ c. bacon fat

½ c. marg

1 c. brown sugar

2 c. flour

1 t. baking soda

1/4 c. boiling water

Cream shortening & fat with sugar. Dissolve soda in boiling water and add to creamed mixture. Add flour, salt & rolled oats. Roll dough thin & cut with cookie cutter.

350º 12 -15 min

 
Thank you! I could probably cut the sugar down further by substituting 1/2 artificial sweetener.

hi Mimi, I've kinda stayed away from recipes with brown sugar but...

maybe using the sugar replacement with a TBL of molasses would do it? that would be 14 grms of carbs spread out over the entire recipe. I haven't tried it but it just might work. I think I'll experiment with a berry crisp topping, it's certainly worth a try if you can't do sugar.

 
Good tip Randi. I often use a T of molasses when using Splenda in baking, just for the taste of

brown sugar. It works for me.

 
The 1 T of molasses makes it not sugar-free, but per serving it's such a small amount of carb/sugar.
