GORSH! Those things are good.

One tip: To two large cans of green enchilada sauce, add one 16 oz. jar of good quality salsa verde. Stir gently to mix and warm in a sauce pan before assembling enchiladas in the tray. Adds a nice "tang" and a little more body to the sauce.
