Was just watching a grillmaster episode of Chopped and they talked about the money muscle. It is interesting and if I hadn't JUST cut up the pork butt I bought this week (for 99cents a #) I had the perfect part of the butt because I had boned out that exact bone shown in the clod of meat I had.
