Basically, I think you can use any recipe in the Vitamix. I’ve used all the linked ones successfully on stovetop. But for the past few years I’ve been using RLB’s all yolk version and scale it up. My NC neighbor gives me fresh eggs. I prefer to eat mostly whites so I freeze the yolks (broken with bit of sugar added) until I have a container full. It takes about 5 minutes at high speed to reach 180 degrees and I check with my Thermapen. (The company claims they are within 0.7 degrees accuracy.)
