More ideas on using up leftover pork tenderloin: Mu-Shu Burritos

For lunch today I took slices of tenderloin, sauteed them to brown, toasted a sesame roll, slathered with hoisin sauce, filled with the sauteed tenderloin, and topped with a leftover grilled pineapple slice. Yummy sandwich.

Tonight I'm serving this for dinner:

Mu-Shu Pork Burritos

Saute strips of the pork with:

shredded carrot

chopped green onion

sliced mushrooms

until veggies are tender

Add minced garlic.

Saute another minute.

Add hoisin sauce, sesame oil, white pepper, and a splash of soy sauce to make the mixture "saucy".

Make an egg crepe by beating eggs with white pepper and a dash of sesame oil. Shred and mix with pork.

Brush flour tortillas with a little sesame oil, heat in a skillet, then fill tortillas with pork mixture and fold into burritos.

I'll have some shredded cabbage, green onions, carrots, and more hoisin sauce available if anyone wants to add them to their burrito.
