Moroccan-Style chicken & Root Vegetable Stew. This recipe from Epi was really good, served it

It is cold and rainy here, this looks like dinner! I see tweaks galore--

think I'll start with using thighs, just like 'em better.
But also can see going vegetarian with chickpeas, as on reviewer suggested, and/or lentils?
Definately cous cous the first time.

I just got a new Moroccan cookbook and I'm all set

to play this weekend! It seems like such a healthful cuisine with all the wonderful vegetables and beneficial herbs and spices.

 
Does anyone remember an early, early recipe site with a girl's name? I got a Moroccan dish

almost like this one from there. It's fabulous for company because you can prep everything ahead of time, then it roasts for quite a while and serves a ton.

This is going to bug me now...

I've made this several times for dinners. I couldn't find kumquats the first time and have left them out ever since.

I also wasn't brave enough to try prunes in a party dish and used golden raisins. Added sweet carrot coins for more veggies.

Amazing how you can stretch out a few chicken breasts to feed 16 people. The fresh cilantro at the end is key. Oh, and sauteed almonds slivers served on top.

I like the other veggies the epi recipe used. Going to have to make this again.

Not one that I have. I do notice that there is not a huge variation among Morroccan recipes. The

greatest variation is among North African and southern Mediterranean countries, and then not a whole lot.

Sure is good food though.
