will ask my question here. We have had a family situation just arise and dinner has to be now cancelled. Can I freeze salted beef tenderloin do you think? Thanks for your advice.

Yes - you can still freeze it but....

once frozen, it's never quite as good. It will still be fine but it does loose a little in texture and flavor. Salting it will help it hold if you want to cook it in a day or two.

On tougher cuts of meat that I buy in large quantities, I put the marinade on the meat and then throw it marinade and all into the freezer. That way it marinates as it freezes and as it thaws. Just make sure you mark it so you know that it's already salted and you or someone doesn't pull it out and resalt it.

we cut off a piece and my immediate family had it for dinner. It was delicious and I will definitely salt it 24 hours ahead again. I appreciate your help.
