My co-worker's brother just got married. He is a chef for two restaurants just outside DC.

In my next life I want a kitchen just like that!! What a dream to have all that room to prep!

Hotel kitchens are always enormous!

...and they have great toys. See the square thing in the back, left of the hand sink? I just learned what that is. It's a giant vat for cooking pasta.

Good idea! I've seen it used as a pasta maker but I wonder if it could also be used as a fryer....

The fryers I've seen are smaller in scale but I've never been in a place where they needed fried food in a massive volume.

Now that I think about it, I've seen the one in the photo twice. It's something like this, in a 50 gallon capacity, or so.
