My cousin's restaurant was featured in Springfield News Leader ...

Nice! and, do you suppose since you are family, that she would give up her secret mayo recipe

to you---so you could share it with us?? I will pass this sandwich recipe on to all my friends who always have tons of leftover salmon to use up. never thought to put it on a blt.

Thanks all! Ang...I've wanted to ask her!

It's really a spicy aioli. I've never asked her for it but I will. Would like to make it myself. I'll let you know.

It's the best, cleanest and yummiest place to eat in this town of 4,500 people. I am so glad they decided to open Estelle's. We had my daughter's wedding reception there in May, 08. It was wonderful!

Thanks for all your kind remarks! I'll pass them on!

I love, love, love salmon, too! Hard to go wrong with it!

I eat the Salmon BLT 95% of the time at Estelle's and where ever else they have it.

There's a Red Robin in Springfield. I've never betn there but I'll be trying those asap, Cheezz! Thanks for the tip!

As old as I am, I have only now found a salmon dish I like. It's at our

local Japanese sushi restaurant. The 8-oz fillet is cooked (I'm not sure how) then napped with a thick teriyaki sauce. Love it. Everytime.

And then I'll be fooled and think I actually do like salmon and will order it out at any other restaurant and I don't like it. It taste fishy. Everytime.

Go figure.

did you see that Target will be carrying only wild Alaska salmon in their freezers? we likey!

Teriaki glaze is my very favorite way to have it! Yum

It's how I make it at home. NOT fond of strong, fishy salmon, either. haha
