Pat included packages of corn tortillas and flour tortillas when she acted as my "personal shopper" for Tex-Mex foods. These aren't easy to find in my area, but when I do find them, I buy in bulk and put them in the freezer.

I just used some last weekend for breakfast. These ended up as 2" high stacks.

La Tortilla green chili corn tortilla, crisped and layered with the following:

pinto beans with diced green chilies added

spinach & garlic (leftover from Boston Market)

diced potatoes (leftover from Boston Market)

fried egg

grilled chicken & pineapple sausage

grated Monterey jack cheese

New Mexico ranchero red sauce (homemade)

Fresh avocado

Fresh cilantro

Squeeze of lime

Sounds weird, but it all worked.

I hear ya Mar, they are the best tortillas. I found a package of the

yellow corn tortillas at the Publix I was working at and LOVE them. They are so much thicker and really taste like yellow corn tortillas should taste! So then the Publix I shop didn't carry them so I took the empty package in and asked them to order them. They are now on the shelf when ever I want them. Ask your Publix to order them for you. If you get any fight back just tell them you bought them down here in a Sunrise Publix so they should be able to get them into the system. If not, just let me know and I'll send them up to you when ever you want them.

 
And thanks to you, Marilyn for the thread -- I'll go to Publix around the corner and look for them.

I am missin' my tex-mex. Not so "tex" here in SC!!
